Puran Poli is a maharashtrian sweet flatbread that is filled with a mixture of boiled, mashed sweetened yellow lentils and jaggery/a natural sweetener called Gur. The rich and aromatic filling (known as puran) is prepared from cooked chana dal (split Bengal gram), jaggery (or sugar), cardamom and nutmeg. The dough, usually made with whole wheat flour, is kneaded soft and rolled out into thin rounds. The dough is sealed and rolled out again to encase the sweet filling, then it is cooked on a griddle with ghee until golden brown.
